To Restful Saturdays

Mike and I got up early this morning and went to Haymarket to buy our fruits and veggies for the week. We made a super fruit salad and some homemade strudels. Strawberry jam and whole wheat dough.

Breakfast Strudel

Dough:
1 1/2 c. flour
1/2 c. butter, softened and cubed
1/2 tsp salt
3 tbsp cold water

Filling:
1-2 tablespoons of jam, jelly, whatever you'd like!

Preheat oven to 450F. Spray baking sheet lightly or lay down parchment paper.

Kneed flour, salt, and butter well. Add water. Kneed until dough ball can be formed. If dough is dry, add more water, 1 tsp at a time.

Dust counter surface with flour. Roll out dough to 1/8 inch thick. Cut into 3x5 rectangles. Lay half of rectangles on baking sheet. Spoon jelly onto middles. Place remaining rectangles on top to cover. Using a fork crease the edges together. Put in oven and bake for 7-8 minutes or until lightly golden.

Optional: Mix 1/4 cup confectioners sugar with 1 tbsp of milk or water to make a glaze. Add milk/water until desired consistency.

Favorite Assistant

Mike, my best assistant. We were making strawberry brownies (huh?) the other night in celebration of him getting an internship. It was late, I was tired, and decided to use honey instead of sugar without proper measurements. And that's where the flavors went funky. They were okay if we're both voting. (I secretly liked the honey.)
